  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla bean paste (or vanilla extract)
  • 1/2 cup vegan butter (room temperature)
  • 1/2 cup + 2 tablespoons sugar
  • 1/4 cup light brown sugar
  • 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)
  • 1/2 cup chopped pecans
  • 1 teaspoon vanilla bean paste (or vanilla extract)
  • 1 1/2 cups + 3 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Prepare the flax egg by combining ground flaxseed and water in a small bowl; let it thicken for about 5 minutes.
  2. Cream together room temperature vegan butter and sugars until fluffy. Mix in the maple syrup and vanilla bean paste.
  3. Add the prepared flax egg along with cornstarch and water; mix well.
  4. Gradually incorporate flour, cinnamon, baking powder, and salt until just combined.
  5. In another bowl, mix chopped pecans with brown sugar, maple syrup, and vanilla bean paste to create the filling.
  6. Preheat your oven to 350°F (175°C). Scoop cookie dough onto a parchment-lined baking sheet and create indents with your thumb.
  7. Fill each indentation with about a teaspoon of pecan filling. Optionally, roll remaining dough into small balls to cover the filling.
  8. Bake for about 10-12 minutes or until edges are lightly golden; cool on wire racks.
