Ingredients

  • 1/2 cup raw cashews (soaked)
  • 1 large garlic clove
  • 1/4 cup water
  • 2 Tbsp nutritional yeast
  • salt & pepper to taste
  • 16 oz vegan pizza dough
  • 1/2 Bartlett pear (thinly sliced)
  • 1/4 butternut squash (thinly sliced)
  • 23 tsp chili oil
  • Fresh arugula for garnish
  • Fresh basil for garnish

Instructions

  1. Soak the cashews in hot water for about one hour. Preheat your oven to 450°F and place your pizza stone inside.
  2. In a blender, combine soaked cashews, garlic, water, nutritional yeast, salt, and pepper. Blend until smooth to create the garlic cashew sauce.
  3. Roll out the vegan pizza dough on a floured surface and carefully transfer it onto the preheated pizza stone.
  4. Spread the garlic cashew sauce over the dough, then layer on slices of butternut squash and pear. Drizzle with chili oil and season with salt and pepper.
  5. Bake for 15-20 minutes until golden brown. Top with fresh arugula and torn basil before serving.
