  • 8 Granny Smith apples
  • ½ cup sugar
  • 1 tsp cinnamon
  • ¼ cup brown sugar
  • 2 cups milk
  • 2 ½ cups flour
  • 1 cup cold butter
  • 2 tbsp butter
  • ¼ tsp nutmeg
  • ¼ tsp allspice
  • ¼ tsp salt
  • juice of ½ lemon
  • ½ cup ice water
  • 4 tbsp cornstarch
  • 1 egg
  • 1 tbsp water
  • 3 egg yolks
  • â…“ cup sugar
  • pinch salt
  • 2 tsp vanilla extract
  • 1 tbsp butter

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Slice apples and mix them with lemon juice, sugar, cinnamon, nutmeg, allspice, and salt in a large bowl.
  3. For the crust, combine flour and salt. Cut in cold butter until crumbly; gradually add ice water to form dough. Chill for 30 minutes.
  4. Roll out half the dough and place it in a pie dish. Fill with the apple mixture.
  5. Prepare the topping by melting butter and stirring in brown sugar, heavy cream, and cornstarch until thickened; pour over apples.
  6. Cover with remaining dough or create a lattice top and bake for 20-25 minutes until golden brown.
