  • 1/4 cup soy sauce
  • 1/2 Tbsp rice apple vinegar
  • 1/2 Tbsp sugar
  • 1 cup chopped onion
  • 1/2 cup peas
  • 1/2 cup carrots (finely chopped)
  • 1/2 cup shelled edamame
  • Optional: furikake seasoning and green onions for topping

Instructions

  1. Cook rice according to package instructions; chilled day-old rice works best.
  2. Prep vegetables by chopping onions, carrots, and setting aside peas and edamame.
  3. In a hot wok, melt vegan butter and sauté onions until translucent (about 2 minutes).
  4. Add peas, carrots, and edamame; stir-fry for another 2 minutes.
  5. Mix in soy sauce, rice vinegar, sugar, and cooked rice; stir-fry for an additional 2–3 minutes until evenly coated.
  6. Serve hot topped with furikake seasoning or sliced green onions.
