Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine flour, baking soda, and salt. In another bowl, cream together unsalted butter and sugar until fluffy. Add vanilla extract, egg, and egg yolk. Gradually mix in dry ingredients until combined. Fold in Christmas sprinkles.
  2. Press the crust mixture into a greased 9-inch springform pan and bake for 15-20 minutes until golden. Cool completely.
  3. For the filling, beat cream cheese with sugar until smooth, then add sour cream, heavy cream, and vanilla extract; mix well. Incorporate eggs one at a time.
  4. Gently fold in cookie dough balls and pour the mixture over the cooled crust. Bake at 325°F (160°C) for 60-70 minutes until set but slightly jiggly in the center.
  5. Cool inside the oven with the door ajar for an hour before refrigerating.
  6. Prepare ganache by heating heavy cream and mixing in white chocolate chips until smooth. Drizzle over cooled cheesecake.
