  • 1 can (15 oz) white beans (cannellini or great northern), drained and rinsed
  • 4 cups kale, chopped
  • 1/2 cup vegetable broth (or water)
  • Juice of 1/2 lemon
  • Salt & pepper, to taste

Instructions

  1. Cook the Polenta: In a medium saucepan, bring the vegetable broth to a boil. Slowly whisk in the polenta and reduce heat to low. Cook for 20–25 minutes, stirring often until thick and creamy. Stir in olive oil, salt, and pepper; keep warm.
  2. Prepare Beans & Kale: Heat olive oil in a large skillet over medium heat. Sauté onion for 3–4 minutes until softened; add garlic and red pepper flakes, cooking for another minute. Stir in white beans, kale, and vegetable broth; sauté until kale is wilted (about 5–7 minutes). Finish with lemon juice, salt, and pepper.
  3. Assemble: Spoon polenta into bowls and top with the bean and kale mixture.
