  • 1 tablespoon chili paste
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 tablespoons olive oil
  • 2 cups jasmine rice
  • 4 cups water or broth

Instructions

  1. Rinse jasmine rice until water runs clear. Combine with water or broth in a pot and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes until fluffy.
  2. In a large skillet or wok over medium-high heat, brown ground beef (about 5-7 minutes). Drain excess fat if necessary and stir in soy sauce and chili paste; cook for another 2 minutes.
  3. In a separate pan, heat olive oil over medium heat. Sauté bell pepper, broccoli, and snap peas for about 5-7 minutes until tender-crisp. Add minced garlic during the last minute.
