  • 1 can black beans (drained and rinsed)
  • Juice of 1 lime
  • 1 cup corn

  1. In a large skillet, heat olive oil over medium heat. Sauté diced onion and bell peppers until softened (4-5 minutes). Add minced garlic and cook for an additional 30 seconds.
