  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a Dutch oven over medium heat, add olive oil and sear the beef cubes until browned on all sides (about 5-7 minutes). Remove beef and set aside.
  3. In the same pot, sauté onions and garlic until translucent (about 3 minutes).
  4. Add diced carrots and celery; cook for an additional 5 minutes until softened.
  5. Return the beef to the pot; add diced tomatoes, beef broth, tomato paste, and herbs. Stir well.
  6. Cover and bake for 2.5 – 3 hours until the beef is fork-tender.
