  • 1 cup chicken breast, diced
  • 1 cup mushrooms, sliced
  • 1 cup carrots, julienned
  • 2 tablespoons soy sauce
  • 1 cup jasmine rice
  • 2 cups water or broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Rinse 1 cup of jasmine rice under cold water until clear. Boil 2 cups of water or broth in a saucepan, add the rice, cover, and simmer for 15 minutes.
  2. While the rice cooks, heat 1 tablespoon of olive oil in a wok over medium-high heat. Cook 1 cup of diced chicken breast for 5-7 minutes until browned and cooked through. Season with salt and pepper.
  3. Add 1 cup of sliced mushrooms and 1 cup of julienned carrots to the wok and stir-fry for another 3-4 minutes until tender yet crisp.
  4. Mix in 1 teaspoon minced garlic and 2 tablespoons soy sauce; stir well and cook for an additional minute.
  5. Fluff the rice with a fork and serve the chicken stir-fry over it.
