  • 1 large burrata ball (or 2 small)
  • 45 ripe plums, halved and pitted
  • 1 cup unsalted pistachios, chopped
  • Olive oil
  • Salt
  • Fresh thyme leaves

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place halved plums on a baking sheet, cut-side up. Drizzle with olive oil and sprinkle with salt.
  3. Roast in the preheated oven for 20-25 minutes until tender and caramelized.
  4. Once cooled slightly, arrange roasted plums around the burrata on a serving platter.
  5. Sprinkle chopped pistachios over the top and garnish with fresh thyme leaves. Serve warm or at room temperature.
