  • 1 sheet (275 g) all-butter puff pastry
  • 80 g pistachio paste (unsweetened)
  • 40 g icing sugar
  • 30 g unsalted butter (softened)
  • 1 teaspoon vanilla extract
  • 80 g raspberry jam (preferably seedless)
  • 1 egg (beaten for egg wash)
  • 1 tablespoon milk
  • Optional: 1 tablespoon finely chopped pistachios (for garnish)

Instructions

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a bowl, mix pistachio paste, icing sugar, softened butter, and vanilla extract until smooth.
  3. Roll out the puff pastry on a floured surface and cut into 8 rectangles.
  4. Place 1 teaspoon of pistachio cream and 1 teaspoon of raspberry jam in the center of each rectangle.
  5. Moisten the edges with water, fold over to seal, and crimp with a fork.
  6. Arrange on the baking sheet and brush with beaten egg mixed with milk.
  7. Bake for 18–20 minutes until golden brown.
