  • 1/3 cup Oil (canola or vegetable)
  • 1 tsp Pure vanilla extract

  • 3/4 cup Unsweetened cocoa powder (dutch process)
  • 1 TBSP Cornstarch
  • 1/4 tsp Salt
  • 1/2 cup Semi-sweet chocolate chips
  • 1/2 cup Milk chocolate chips
  • 1/2 cup All-purpose flour
  • 1 tsp Cornstarch
  • 1/2 tsp Baking soda
  • 1/8 tsp Baking powder
  • 1/4 tsp Salt
  • 1/4 cup Unsalted butter (room temperature)
  • 1/3 cup Brown sugar (packed light or dark)
  • 1/8 cup White granulated sugar
  • 1/4 cup Peanut butter (creamy)
  • 1 tsp Pure vanilla extract
  • 1 Large egg (room temperature)
  • 1/2 cup Quick oats
  • 1/2 cup Mini chocolate chips
  • 1/2 cup Mini M&M’s

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a 9×13 inch baking pan.
  2. For the brownie layer, mix granulated sugar, eggs, unsalted butter, oil, and vanilla in a bowl until smooth. Sift in flour, cocoa powder, cornstarch, and salt; fold in chocolate chips.
  3. For the monster cookie layer, whisk flour, cornstarch, baking soda, baking powder, and salt together. In another bowl, beat butter with sugars and peanut butter until creamy; then add the egg and dry ingredients along with oats, mini chocolate chips, and M&M’s.
  4. Spread brownie batter in the prepared pan and dollop cookie mixture on top without mixing too much.
  5. Bake for about 40 minutes until a toothpick comes out mostly clean. Let cool before slicing.
