  • 1 pound boneless, skinless chicken breasts
  • 12 ounces linguine pasta
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon paprika
  • 2 tablespoons lemon juice
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Cook the linguine according to package directions in salted water. Reserve ½ cup pasta water before draining.
  2. In a large skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper, cooking for 5–7 minutes until browned. Remove from skillet.
  3. In the same skillet, melt butter and sauté garlic with paprika for about a minute.
  4. Stir in Dijon mustard, lemon juice, and chicken broth (or reserved pasta water). Scrape any browned bits while simmering.
  5. Pour in heavy cream and half of the parsley; cook for another 2 minutes until slightly thickened.
  6. Return chicken to the pan along with cooked linguine and parmesan cheese. Toss to combine, adding reserved pasta water as needed.
  7. Adjust seasoning with salt and pepper; garnish with remaining parsley before serving.
