  • 450 g chicken breast
  • 1 tbsp olive oil
  • Salt & pepper
  • 2 tbsp whole grain mustard
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1 red bell pepper, sliced
  • 1 cup baby spinach leaves
  • 1 cup cherry tomatoes
  • 1 tsp olive oil
  • 1 cup white rice
  • 2 cups water
  • Pinch of salt

Instructions

  1. In a pot, combine water and a pinch of salt. Bring to a boil, add rice, reduce heat, cover, and simmer until fluffy.
  2. Preheat oven to 200C (400F). Toss cherry tomatoes with olive oil, salt, and pepper on a baking tray; roast for 10-12 minutes.
  3. Heat olive oil in a skillet over medium-high heat. Season chicken pieces with salt and pepper; cook until golden brown.
  4. Stir in mustard, honey, soy sauce, and lemon juice into the skillet; cook until sauce thickens.
  5. Incorporate sliced bell pepper into the skillet; cook for an additional two minutes until slightly tender.
  6. Serve chicken and peppers over baby spinach leaves with roasted cherry tomatoes on top alongside fluffy rice.
