  • 2 tablespoons butter
  • 1 tablespoon fresh basil (roughly chopped)
  • 1 tablespoon fresh thyme (roughly chopped)
  • 1 tablespoon fresh oregano (roughly chopped)
  • 1 tablespoon fresh rosemary (roughly chopped)
  • 5 cloves garlic (minced)
  • 2 cups sliced carrots
  • 1 medium sweet yellow onion (diced)
  • 3 tablespoons tomato paste
  • 1 tablespoon flour
  • 4 cups chicken broth
  • 1 can (28 oz) peeled, whole tomatoes
  • 1 tablespoon apple cider vinegar

Instructions

  1. In a large pot over medium heat, cook chopped turkey bacon until crispy (about 10 minutes). Add butter and melt.
  2. Stir in fresh herbs and garlic; cook until fragrant (2-3 minutes). Add diced carrots and onion; cook until softened (about 10 minutes).
  3. Mix in tomato paste and stir for 2-3 minutes. Add flour, chicken broth, and canned tomatoes, smashing tomatoes into the mixture with a spoon.
  4. Stir in apple cider vinegar; bring to a boil then reduce heat to simmer for 30-45 minutes.
  5. Blend soup until smooth using a blender or immersion blender.
  6. Serve hot with burrata if desired.
