  • 4 small sugar pumpkins
  • 1 pound ground turkey
  • 2 tablespoons unsalted butter
  • 8–10 fresh sage leaves, chopped
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • ½ cup cooked quinoa or rice (optional)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes (optional)
  • ½ cup grated Parmesan cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Cut the tops off the pumpkins and scoop out seeds and pulp. Brush insides lightly with olive oil.
  2. In a skillet over medium heat, melt butter until golden brown. Add sage and cook until fragrant. Stir in onion and garlic; sauté until translucent.
  3. Add ground turkey, seasoning with salt, pepper, and red pepper flakes. Cook until browned. Mix in quinoa or rice if using; remove from heat and stir in half of the Parmesan cheese if desired.
  4. Stuff each pumpkin with the turkey mixture, packing gently. Top with remaining Parmesan cheese if using. Replace tops on pumpkins.
  5. Bake for 35–45 minutes until pumpkins are tender when pierced with a fork.
