  • 1 chicken breast
  • 1 cup cooked white rice
  • 1 cup cucumber, sliced
  • 1 cup cherry tomatoes
  • 23 lettuce leaves
  • red onion, thinly sliced
  • 1 cup plain Greek yogurt
  • 1 tbsp fresh herbs (parsley, dill, or cilantro), chopped
  • 1 tsp lemon juice
  • 1 tsp olive oil
  • salt & pepper, to taste

Instructions

  1. Season the chicken breast with salt, pepper, and olive oil. Grill or pan-sear for 5-6 minutes on each side until cooked through. Slice into strips.
  2. Prepare the white rice according to package instructions and let it cool slightly.
  3. In a mixing bowl, combine Greek yogurt, chopped herbs, lemon juice, salt, pepper, and optional chili flakes. Mix well.
  4. Slice cucumber into rounds and halve cherry tomatoes; thinly slice red onion and tear lettuce into bite-sized pieces.
  5. Assemble by placing rice at the base of a serving bowl; layer with chicken strips, cucumber slices, cherry tomatoes, lettuce pieces, and red onion. Add a dollop of herb yogurt sauce on top.
