  • 600 g rib-eye steak, trimmed and pounded
  • 300 g cremini mushrooms, sliced
  • 1 medium onion, thin-sliced
  • 1 Tbsp Dijon mustard
  • 150 ml full-fat sour cream
  • 500 ml low-salt beef broth
  • 2 Tbsp butter
  • 1 Tbsp plain flour
  • 2 Tbsp neutral oil for searing
  • Kosher salt and freshly cracked black pepper to taste
  • Chopped chives for garnish

Instructions

  1. Pound the rib-eye steak to an even thickness, slice into strips, and season with salt and pepper.
  2. Heat oil in a large skillet over high heat and sear half of the beef strips for about 30 seconds on each side. Transfer to a plate.
  3. Repeat with remaining beef strips.
  4. Lower heat to medium, melt butter in the same skillet, and cook onions until translucent. Add mushrooms and cook until golden brown.
  5. Sprinkle flour over vegetables and stir to create a roux.
  6. Deglaze with half a cup of beef broth while scraping browned bits from the pan; once smooth, add remaining broth and mustard, simmer for five minutes.
  7. Off heat, stir in sour cream until smooth, then return the beef to warm through gently.
  8. Serve over buttered egg noodles or tagliatelle garnished with chives.
