  • 400g chickpeas, drained and rinsed
  • 500g cherry tomatoes, halved
  • 6 cloves garlic, minced
  • 60ml olive oil
  • 1 tsp dried oregano
  • ¼ tsp red pepper flakes
  • Salt and pepper to taste
  • 240ml vegetable broth
  • Fresh basil, chopped (for garnish)
  • 2 tablespoons nutritional yeast (optional)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine chickpeas, cherry tomatoes, minced garlic, olive oil, oregano, red pepper flakes, salt, and pepper. Toss until well-coated.
  3. Spread the mixture evenly on a baking pan and roast for about 20 minutes until golden brown.
  4. Meanwhile, cook the pasta according to package instructions. Reserve some pasta water before draining.
  5. In a large bowl, mix the roasted vegetables with the cooked pasta and gradually add vegetable broth and reserved pasta water to achieve desired consistency.
  6. Stir in chopped basil and nutritional yeast (if using). Serve immediately.
