  • 1 chicken breast, sliced
  • 1 tbsp butter
  • 2 garlic cloves, minced
  • Salt & pepper, to taste
  • 1 cup cooked jasmine or basmati rice
  • 2 medium carrots, peeled and cut into sticks
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 200C (400F). Toss the carrot sticks with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until caramelized.
  2. While the carrots roast, cook the rice according to package instructions and keep warm.
  3. In a skillet over medium heat, melt the butter. Add minced garlic and sauté until fragrant. Season the chicken slices with salt and pepper before adding them to the skillet. Cook for 5-7 minutes until golden brown and fully cooked.
  4. To assemble, layer warm rice on a plate, top with garlic butter chicken slices, and add roasted carrot sticks. Garnish with scallions or drizzle with honey mustard if desired.
