  • 1 chicken breast, sliced
  • 1 tbsp butter
  • 2 garlic cloves, minced
  • Salt & pepper to taste
  • 1 cup cooked jasmine or basmati rice
  • 2 medium carrots, peeled and cut into sticks
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 200C (400F). Toss the carrot sticks in olive oil, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until caramelized.
  2. While the carrots roast, cook the rice according to package instructions and keep it warm.
  3. In a non-stick skillet over medium heat, melt the butter. Sauté minced garlic until fragrant (about 1 minute), then add seasoned chicken slices. Cook for 5-7 minutes until golden brown.
  4. To serve, layer warm rice in a bowl, top with cooked chicken and roasted carrots. Garnish with chopped scallions and optional drizzles of honey mustard or garlic aioli.
