  • 65 g powdered sugar
  • 70 g egg whites (at room temperature)
  • 75 g fine granulated sugar
  • 1/4 teaspoon cream of tartar (optional)
  • 1/4 teaspoon coarse kosher salt
  • Gel food coloring (if desired)

Instructions

  1. Preheat the oven to 150°C (300°F) and line baking sheets with silicone mats or parchment paper.
  2. Sift together almond flour and powdered sugar in a mixing bowl.
  3. In another bowl, whip room-temperature egg whites until frothy, then gradually add granulated sugar until stiff peaks form.
  4. Gently fold dry ingredients into the egg whites until just combined; add gel food coloring if desired.
  5. Pipe small circles onto prepared baking sheets and let rest for about 30 minutes to form a skin.
  6. Bake for approximately 18 minutes until they lift easily from the sheet.
  7. Allow to cool completely before filling with a mixture of egg yolks, granulated sugar, milk, softened butter, and vanilla extract.
