  • 1/2 cup softened butter
  • 1/3 cup vegetable or canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature)
  • 1 tsp vanilla extract
  • 2 & 1/3 cup all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 5 tbsp butter
  • 2/3 cup brown sugar
  • 1 & 1/4 cup chopped pecans
  • 1/3 cup heavy cream
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar until light and fluffy. Add in the egg and vanilla extract; mix until well combined.
  3. Gradually mix in the flour, salt, and baking powder until just combined.
  4. Use a cookie scooper to scoop nine equally sized balls onto the prepared baking sheet. Gently flatten each ball to about one inch thick and press down in the center to create space for filling.
  5. Bake for 8-9 minutes until lightly golden around the edges but still soft in the center. Allow cooling on the baking sheet before transferring to a wire rack.
