  • 2 pounds ground beef (or ground chicken/turkey)
  • 2 yellow onions, chopped
  • 2 poblano peppers, seeded and chopped
  • 28 ounces crushed fire roasted tomatoes
  • 8 ounces tomato paste
  • 4 ounces diced green chilies
  • 1/3 cup hot sauce
  • 3 tablespoons salted butter
  • 6 ounces cream cheese
  • 2 cups shredded cheddar cheese
  • 1 can mixed chili beans, drained
  • 23 cups chicken or beef broth
  • 2 bay leaves
  • Salt to taste
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup chopped green onions
  • Avocado and Greek yogurt, for serving

Instructions

  1. Prepare ingredients by chopping vegetables and setting them aside.
  2. In a skillet over medium heat, brown the ground beef thoroughly; drain excess fat.
  3. Transfer the beef to the crockpot and add chopped onions and poblano peppers.
  4. Stir in seasonings (chili powder, garlic powder, smoked paprika, ground cumin, cayenne pepper), then add crushed tomatoes, tomato paste, hot sauce, butter, bay leaves, salt, and broth.
  5. Mix well and cook on low for about 2 hours.
  6. Stir in cream cheese until melted; then add shredded cheddar cheese until creamy.
  7. Serve hot topped with cilantro, green onions, avocado slices, or Greek yogurt.
