  • 2 large portobello mushrooms
  • Juice of 1 lemon
  • 12 butter crackers
  • 3/4 cup breadcrumbs
  • 1/2 cup shredded parmesan cheese
  • 2 large eggs (beaten)
  • 1/2 cup tomato sauce
  • 1/2 cup mozzarella cheese
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 3/4 cup all-purpose flour
  • 2 tablespoons olive oil or avocado oil
  • Fresh chopped basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Clean the portobello mushrooms and remove the stems. Squeeze lemon juice over the mushrooms and season with salt and pepper.
  3. Crush butter crackers in a bowl, then mix in breadcrumbs, parmesan cheese, garlic powder, salt, and pepper.
  4. Set up a breading station with bowls of flour, beaten eggs, and breadcrumb mixture.
  5. Dredge each mushroom in flour, coat with egg, then press into the breadcrumb mixture to cover completely.
  6. Place on a baking sheet lined with parchment paper; drizzle olive oil over them. Bake for about 15 minutes until golden brown.
  7. Remove from the oven; spoon tomato sauce over each mushroom and sprinkle with mozzarella cheese. Return to the oven for another 5 minutes until cheese melts.
  8. Garnish with fresh basil before serving warm.
