  • 1 teaspoon salt
  • 1/4 cup fresh basil
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the eggplant into ½-inch thick rounds and sprinkle salt on both sides. Let sit for about 15 minutes.
  3. Rinse off excess salt and pat dry.
  4. Set up a breading station: whisk the egg in one bowl; combine breadcrumbs, Parmesan, Italian seasoning, and pepper in another.
  5. Dip each eggplant slice into the egg mixture, then coat with breadcrumbs thoroughly.
