  • 6 cloves garlic (3 cloves thinly sliced and 3 cloves minced)
  • 1/2 medium yellow onion, diced
  • 1 tbsp fresh ginger, grated
  • 4 scallions, thinly sliced (white and green ends separated)
  • 2 tbsp gochujang
  • 1.5 lb butternut squash, peeled and cubed
  • 2, 15 oz cans black beans, drained and rinsed
  • 1.5 cups good quality vegetable broth
  • 1 tbsp tamari
  • 1 tbsp rice vinegar
  • 1 tbsp maple syrup
  • 2 tbsp natural peanut butter
  • Zest and juice of 1 lime
  • Kosher salt

Instructions

  1. Prepare crispy garlic: Heat avocado oil in a large skillet over medium-low heat. Add sliced garlic and cook until golden brown, about 3 minutes. Transfer to paper towels and sprinkle with salt.
  2. Sauté onions and aromatics: In the same skillet, add diced onion with salt; sauté for 4–5 minutes until softened. Add minced garlic, grated ginger, and white parts of scallions; sauté for another 2 minutes.
  3. Incorporate gochujang: Stir in gochujang into the onion mixture; continue sautéing for about 3 minutes.
  4. Cook butternut squash: Add cubed butternut squash and pinch of salt; sauté for about 5 minutes. Add vegetable broth (1–2 tbsp) and partially cover; cook undisturbed for 5 minutes, then stir to soften cubes.
  5. Mix broth ingredients: Combine vegetable broth, tamari, rice vinegar, and maple syrup in a bowl; whisk together.
  6. Combine beans and broth mixture: Pour black beans and broth mixture into the pan; stir well. Simmer with lid partially on for 15–20 minutes or until squash is tender.
  7. Finalize stew: Remove lid; mix in peanut butter along with lime zest and juice until blended evenly.
  8. Serve: Enjoy over cooked rice if desired, garnished with remaining scallions and crispy garlic.
