  • 12 oz chicken sausage (casings removed)
  • 1 tablespoon olive oil
  • 10 oz potato gnocchi
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup butternut squash puree
  • 3 cloves garlic (minced)
  • 2 tablespoons fresh sage (chopped)
  • 2 tablespoons fresh thyme
  • Salt and coarsely ground black pepper (to taste)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the sliced chicken sausage and cook until browned on both sides.
  2. Stir in the uncooked potato gnocchi, heavy cream, and chicken broth. Bring to a boil, then cover and simmer for about 5 minutes.
  3. Add the butternut squash puree and minced garlic to the skillet. Bring back to a boil, reduce heat, and let simmer until thickened.
  4. Remove from heat and stir in half of the chopped sage and thyme. Season with salt and pepper to taste.
  5. Serve hot, garnished with remaining fresh herbs.
