  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 medium ripe bananas, mashed (about 1 1/4 cups)
  • 1/4 cup sour cream or plain yogurt
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, beat together softened butter and brown sugar until creamy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, mashed bananas, and sour cream.
  4. Gently fold in the dry ingredients until just combined.
  5. For the cream cheese filling: In a small bowl, beat together cream cheese, granulated sugar, egg, and vanilla extract until smooth.
  6. Pour half of the banana batter into the prepared pan. Spread the cream cheese mixture on top and then add remaining banana batter.
  7. Bake for 55–65 minutes or until a toothpick comes out mostly clean. Cool in the pan for 15 minutes before transferring to a wire rack.
