  • 2 tbsp curry powder

  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp chili powder or 1 fresh chili (optional)
  • 2 tbsp tomato paste or 1/2 cup crushed tomatoes
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup beef broth or water
  • Salt and black pepper, to taste
  • Fresh cilantro or parsley, for garnish

Instructions

  1. Heat oil in a large pot over medium heat; sauté chopped onion until golden brown (5–7 minutes).
  2. Add minced garlic and grated ginger; cook for about 1 minute.
  3. Stir in curry powder, turmeric, cumin, coriander, and optional chili powder; toast for 1–2 minutes.
  4. Mix in tomato paste or crushed tomatoes; cook for an additional 2–3 minutes.
  5. Return seared beef to the pot and stir well.
  6. Pour in coconut milk and beef broth; bring to a gentle simmer.
  7. Cover and reduce heat; let it simmer for 1.5 to 2 hours until beef is tender.
  8. Adjust thickness by uncovering during the last 15–20 minutes if desired.
  9. Season with salt and pepper; garnish with fresh cilantro before serving.
