  • 2 salmon fillets (150-180g each)
  • 1 tsp Cajun seasoning (or smoked paprika + chili powder)
  • Salt and black pepper, to taste
  • 3 tbsp olive oil
  • 2 cups baby potatoes, halved
  • 2 cloves garlic, minced
  • Chopped parsley (for garnish)
  • 1 bunch asparagus, trimmed
  • 1 cup shredded mozzarella (or Italian blend)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss halved baby potatoes with olive oil, minced garlic, salt, pepper, and parsley in a mixing bowl. Spread on a baking tray.
  3. Roast potatoes for 25-30 minutes until golden and crisp, flipping halfway through.
  4. On another tray, place trimmed asparagus drizzled with olive oil, salt, and pepper. Bake for 12-15 minutes until tender; add cheese during the last 5 minutes.
  5. Season salmon fillets with Cajun seasoning and a bit of olive oil. Bake or pan-sear for 12-15 minutes until cooked through.
  6. Serve by layering potatoes next to asparagus topped with salmon, garnished with parsley.
