  • 1 egg
  • â…“ cup cold heavy cream
  • ¼ cup cold whole milk
  • â…› tsp pure almond extract
  • 1¾ cups flour
  • 2 tablespoons white sugar
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 8 tablespoons unsalted butter (chilled)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Grind half of the toasted almonds with sugar until fine, and chop the remaining almonds into small pieces.
  3. In a bowl, whisk together the egg, heavy cream, milk, and almond extract until combined.
  4. In another bowl, mix flour, ground almond-sugar mixture, baking powder, and salt.
  5. Rub in chilled butter until you achieve a pebbly texture.
  6. Combine wet and dry ingredients gently; fold in chopped almonds.
  7. Spoon dough onto the baking sheet, sprinkle with sliced almonds if desired, and bake for about 22 minutes until golden brown.
